Although the Valley's three locations are part of Roy's international empire, they don't taste like chain fare. Chef Roy Yamaguchi pioneered Pacific Rim cooking in the 1980s, and he's still got the knack. Fish is the strong point: Look for mahi-mahi and blackened ahi in a hot soy-mustard butter. The classic desserts -- pineapple upside-down cake and chocolate soufflé -- are beautifully done.
