If you’ve never been to Louisiana, Baby Kay’s is the next best thing without actually having to leave the desert. It’s got shrimp rémoulade, red beans and rice, jambalaya, boudin (a fried Cajun sausage served with apricot pepper jelly), po’boys, and on and on. Moreover, unlike at some of Baby Kay’s competitors, it’s all worth gnawin’ on, and by the end of your meal, you’ll be rubbing your belly and saying “ooh-wee” just like Cajun chef Justin Wilson did back in the day.
